Established in 2004 as a humble corner coffee shop, our Melbourne-born roastery has not only stood the test of time but has flourished into a bustling café known for its exceptional brunch and specialty coffee offerings. As we celebrate its 20-year anniversary, let’s take a journey through the evolution of the iconic Chosen Bean.

A Humble Beginning

It all started with a passion for coffee. In 2004, Melbourne born Stephen Coster found a love for the art of coffee roasting and opened his doors to the community. What began as a small-scale business soon gained a reputation for its meticulously roasted beans and inviting atmosphere. Located in Mountain Gate, right at the bottom of the Dandnong Ranges, our roastery and cafe quickly became a favourite spot for coffee aficionados seeking quality brews and warm hospitality.

From Coffee Shop to Café Haven

Over the years, the roastery expanded its offerings beyond just coffee. Recognising the demand for a great brunch experience, our team carefully curated a menu that celebrates both classic favourites and innovative dishes, drawing inspiration from our world travels. From hearty breakfasts to indulgent brunch specials, every item is crafted with locally sourced, high qaulity ingredients.

The Art of Coffee Roasting

At the heart of Chosen Beans roastery success lies the dedication to the craft of coffee roasting, making it a passion for Stephen Coster, who is not only the owner, but the roaster too. Every batch is carefully curated, ensuring that each cup delivers a rich, nuanced flavor that Melbourne has come to expect and adore. Stephan created multiple award winning blends, including a gold medal for Espresso. Not only do we serve our exceptional coffee on-site but also offer retail coffee goods, allowing patrons to bring a piece of their favourite brew home.
